The edge is the business end of a knife. It is skillfully honed by hand and incredibly sharp. For different cutting tasks different blade shapes and edges are recommended.

The Differences:

Straight-edge blade: The straight edge allows a smooth and clean cut. When carving no fibres are torn out of the meat. This edge can be used for firm and soft food like meat, vegetables and fruit.

Serrated-edge blade: The wavy or serrated edge allows an easy cut through crusty food like a traditional roast and crispy bread.

If, like some pros, you like to grip the top of the blade between your thumb and index finger, forward of the bolster, and wrap the rest of your fingers around the handle, this knife is hard to beat. Such a grip is said to give better control, straighter cuts, and narrower slices than wrapping all fingers around the handle allows.

I took a knife-handling techniques course offered by a Wusthof rep at a local shop and was amazed by how quickly this knife turned carrots, celery, and nearly anything else into neat slices and chunks. Using the grip described above, one merely rolls the knife back onto the item being cut, lifts the back only, and repeats, sliding the food into the knife. The front of the blade merely rolls and slides on the cutting board, and is never lifted. (Compared to this, the instructor said my lift-and-chop technique was fairly effective, but abusive! *L*) With this knife, you could cut a carrot or celery into neat, thin little slices in less time than it takes to lift the lid off your food processor and get ready to clean it.

I've got other good knives - prior to this knife, I already owned Henckels 4-star 6" chef's and fillet knives, a Henckels Pro-S 3" paring knife, and a Wusthof hollow-edge santoku (another awesome tool). The Henckels knives are excellent quality, but do not lend themselves to the forward grip; I tried it with my Henckels chef's knife and found that the forged bolster felt sharp-edged when I gripped the blade this way. Make no mistake - the Henckels is an excellent knife and works well, albeit with slightly less control, when all fingers are wrapped around the handle. The Wusthoff knife has a shallower transition fillet from blade to bolster and lends itself to either grip. I'd chosen the 6" Henckels because it felt well-balanced gripping the handle alone, while the 8" seemed heavier and less agile, but with the proper grip the 8" Wusthof Classic is balanced just right. The Wusthof Grand Prix, like the Henckels, tends to encourage an all-fingers-on-handle grip, though the bolster region may be more finger-friendly. I used to look longingly at Grand Prix knives, but last night's class sold me on the benefits of the Classic handle.

Needless to say, after giving it such a thorough tryout I took this knife home with me!

I am an assistant to an executive chef and instructor at one of the top ten culinray schools in the country. Althought I am not a professional myself, I find that using top equipment makes the differences. This knife speaks for itself. The edge has remainded true without a lot of fuss. The ease of use is something else. If used correctly you can slice and dice all day. The only drawback is the weight. This knife feels comfortable to use; it slices elegantly and smoothly through thick or thin meat and produce. I can slice very thin or thick even slices.

I have large hands and the handle fits perfect. This knife also looks great. I considered a MAC Chef Knife; but the Shun left-handed handle feels perfect. I think the handle is small enough for people with smaller hands too. I did also consider a high quality tier Wusthof or Henckel; but I did not like their handles or feel.

The Shun feels ideal in terms of weight and balance and all forms of cutting and slicing. I do having a paring knife; but it is not a Shun. I am considering getting a Shun Paring Knife as my Henckel (middle quality tier) is no where near as sharp and it's handle is a little short compared with the Shun. The blade and over all look of the Shun Classic Chef knife is beautiful. It is my favorite and best knife I have owned.

I use a bamboo cutting board with this knife. I rinse them off and wipe them dry after each use; both the Knife and cutting board. They are easy to wash and dry. The knife is a joy to use and makes food preparation fun. I keep my Shun Chef Knife in a wooden block. This knife is worth it's cost.

(What's this?) In reviewing the three items in this set, I found the 4066/9cm paring knife to have a good design, rugged construction, and very importantly, to be super sharp. This knife cuts prescription pills in half better than any other knives that I have used in the past. It should last for many years.

As far as the 4582/29cm knife, it has a good, heavy design, is a precision instrument and also super sharp. Again, it is a knife that should last many years.

The 5558 scissors were my favorite item, taking into consideration the excellent design and rugged construction. There are two nice features that owners will appreciate in regard to these scissors. The first is the fact that the scissor blades come apart for easy cleaning. The second is that the rounded serrated teeth in the handles allows one to use the scissors to easily remove stubborn caps on bottled drinks. My only recommendation is that the cutting blades for these scissors be about three cm longer. Anyone purchasing this set will be pleased with the quality and workmanship. Keep handy in your kitchen drawer.

This 8 1/2 inch bladed chef's knife has dimples to glide through all your food cuts! The blade handle has a bolster at the end of the blade for better grip and balace and it also keeps food from gathering into the handle. Very nice and sanitary!

I keep slicing my dish sponges in half on accident when I wash this thing... it comes out of the box well-sharpened and has done a wonderful job in the three months I've owned it. FYI, this blade is single-side sharpened.

Although I've been hand-drying it after use, the steel shows subtle signs of discoloration where perhaps some tomato juice sat too long. High maintenance item. Then again, it's still a beautiful piece of cutlery. To my senses, it grips really well.

I'm a fanatic about my cooking knives - I like them to be true and razor sharp. My old standby Sabatier professional chef knives are starting to show their age, so I've been trying other designs to see what I like. I've read good things about ceramic knives, and Kyocera in particular, so this was one near the top of my list to consider.

The knife itself came packaged as you'd expect for a knife of this price point. But when I took it out of the box, I could tell I was in for a different experience.

Of course, the dark gray blade and Damascus pattern is different, but the knife was also quite a bit lighter in weight than I'm accustomed to for this size blade. I'm not sure if this is a good thing or a bad thing, but it feels very different in my hand. It's certainly razor sharp, and a glance under a high-power magnifier reveals a nearly perfect edge with no pits or ruts, even after being used several times. In comparison, my conventional knives always show some slight pitting after use when examined this way.

The handle shape is a bit straight and square, and I found it a little uncomfortable for my hand. I like slightly wider and rounded handles with a bit more heft to them, but this is a personal choice. The blade itself is also a bit thick - I'm sure this is a byproduct of the ceramic design, and no doubt it strengthens the knife, protecting it from breakage if twisted.

Only real complaint is that I found the finish of the handle a bit subpar for such an expensive knife. There were bits of flash from the manufacturing process that I would have expected to have been polished smooth.

Overall, I like it, and while I'm not sure I'll be buying a whole set, if you like ceramic knives, this might be just what you're looking for.

Types of Blades The Right Blade for Every Purpose

The edge is the business end of a knife. It is skillfully honed by hand and incredibly sharp. For different cutting tasks different blade shapes and edges are recommended.

The Differences:

Straight-edge blade: The straight edge allows a smooth and clean cut. When carving no fibres are torn out of the meat. This edge can be used for firm and soft food like meat, vegetables and fruit.

Serrated-edge blade: The wavy or serrated edge allows an easy cut through crusty food like a traditional roast and crispy bread.

Hollow-edge blade: When cutting an air pocket is created between the hollow edge and the slice. This prevents the food from sticking to the blade and allows for finer slices.

The right chef's knife for you is a matter of personal preference, and with knives first impressions are not always lasting. You may be tempted to choose a lighter sleeker model. The size and heft of this knife may be a bit off putting at first. But if you are committed to using correct technique, you will soon fall in love with this blade for those very same reasons. While a cook might reach for this knife out of habit for any number of chores including those for which it was not designed, most often it will be used to chop stuff. This is the original food processor.

With your fingers curled away from the blade the knuckles of your holding hand confidently ride the wide flat surface of this blade. Meanwhile the knuckles of your knife hand are well clear of the cutting board. For greater comfort, I have ever so slightly relieved the edges of the bolster, but I have never owned a knife (with a bolster) that didn't benefit from the same treatment. The blade's ample mass keeps it steadily on line without a hint of flex or wobbles. Because the knife adds its own heft to the down stroke, you will not have to push down into it with the same forces you would need on another knife. This makes it safer. At 58C on the Rockwell scale, the chrome moly steel in this blade is an excellent hardness to take an edge keen enough to shave with and strong enough to chop wood. Also, it doesn't turn colors like older Soligen steel knives.

When the chopping is done, a cook always faces the same annoying choice, slide the pile up on the face of the blade to transfer it to the bowl or pan or reach for a dough blade. Little pile, use the knife, big pile reaches for the dough blade. While this knife does not solve that problem as well as a Chinese cleaver, it does give you just enough more surface that frequently you are pleasantly aware that you just beat the odds. This blade is guaranteed for life. When the terms of that agreement run out, you will still be glad you chose this knife.

If you like high-end products crafted from the cutting-edge (literally) technology, then be sure to check out these knives. I've checked them out in person but will wait to buy them since I've recently received as gifts a Henckels set (which I like but not love). They're beautiful - and functional - work of art, but like any high-performance machine, it requires a sophisticated user who gives it proper maintenance. I just love the way its sharp blade just glides insouciantly thru tough fibers. Highly recommended for pros and enthusiasts.
